On Your Door Step This Autumn.

After a few really busy weeks, i’ve literally had no life at all, so this weekend was the first weekend where I could do something other than sleep. Autumn is my absolute favourite, so heres some ideas of things you can do this Autumn around Leicestershire.

Cattows Farm & Tea Room – Pumpkin Picking. 

I went yesterday and didn’t know what to expect really but I was really surprised. I took my niece and nephew and we had a great time. Theres no cost for parking or seeing the animals. The only thing you pay for there is the pumpkins that you take home and a hot drink or food from the tea room which is really reasonably priced and had many gluten free options.

When you arrive theres face painting, many decorations to take photos with, countless pre picked pumpkins and loads more. As you walk down theres huge mountains of hay to climb (my niece and nephew loved this) plus tractors, cars and other toys to ride on. Theres also inflatable slides and rides in the field next to the pumpkins.

As you walk down they’ve decorated the farm amazingly for halloween. I had to convince my niece the grave stones weren’t actually real! Then as you walk in to the next field (the pumpkin patch) there is more pumpkins then you can ever imagine! All I kept being told was “This is so much better than Morrisons!” .. Which is defiantly a compliment! I’m just a little gutted i hadn’t taken them properly before now, theres so much to do and animals to see too and you can easily spend hours there! The entire day cost us £3.08 cause we took a pack up with us.

Diwali Light Switch On – Belgrave Road, Leicester, Sunday 28th October. 

The Diwali celebrations in Leicester are HUGE every year and are some of the best in the UK. The festivities are based on Belgrave Road but spread all over the city.

The Diwali light switch on brings ‘The Golden Mile” in Leicester alive with thousands of lights and an entire ray of different colours.

The event takes place from 5:30pm until 9pm and the event is Free.

Bradgate Park.

Bradgate park is open all year round but it’s my favourite in the Autumn when the leaves are on the floor and you get freezing feet walking through the river in your wellies.
Theres so many different routes to take in Bradgate park, photo opportunities and just loads to see.

Outside the park theres numerous tea rooms too but we usually get hot chocolate from the tea room inside the park half way down the park road. It comes with cream and marshmallows so it’s always a hit for little people that are usually with me!

Parking in the park is around £3 but there is also on street parking.

New Walk Museum. 

New Walk Museum is again, open all year around, but it’s amazing when you need something cheap and different to do on a cold or wet day. Theres different rooms full of different projects. These vary from Ancient Egypt, Dinosaurs with full size skeletons and fossils to under the sea. We love it here as it’s really easy to get to and the walk from Vicky Park (where you can park for £3 for 3 hours) to the museum itself is really pretty and theres loads of different things to look at.

Theres no entry cost into the Museum itself, but they ask for a donation.

Thornton Reservoir.

Thornton Reservoir is literally on my doorstep with it being less than 2 miles away from me. The reservoir is one of the most peaceful places I know. It offers a network of trails and footpaths around the reservoir and through the neighbouring woodland areas. There are also links with longer trails including the Leicester round and various other footpaths.
You can either go the muddy way (we love wellies so this is what we do) or stick to the paths to get yourself around the reservoir.
The reservoir is opposite a garden centre which has one of the cutest coffee shops i’ve ever been too.

Parking is free, and theres no entry fee.

Alpaca Park Farm

The Alpaca Park Farm is an animal park. It has animals that include pygmy and angora goats, donkeys, pigs, loads of chickens and of course Alpacas! You can feed the animals there too!

They serve breakfast from 10am and have a huge selection of Gluten free Cakes too.. plus, did i mention you get to pet an Alpaca?

It’s free entry, they just ask for a donation.

Give them ago, there all cheap and easy to do for under £5!

Schar Melto’s & Temptie’s – Worth the hype and the price?

Hiiii!

So, as soon as you look on any gluten free blog or page, we’re all hyping about the Brand New Schar “Melto’s” and “Temptie’s”.

After messaging Schar repeatedly on twitter to see where they were in stock etc (and not going to lie, actually being kind of disappointed with the customer service I received on this..) Me and my mum decided after 3 weeks of trying to find the products we’d give up.

I went to work, she went shopping and boom, she find’s the products – eventually!

So, theres 2 products amongst other brand new ones, which include the chocolate dip pot  and the wafers too.

The first thing I tried was the “Temptie’s”. I’m unsure what i expected but they were really nice! Full of flavour, with a nice texture. But at a price of £2.50 minimum per box (you get 3 in a box) These seemed really expensive. They’re nice, but definitely nice as a treat and not an every week kind of thing.

Secondly I tried the Melto’s. These are AMAZING and I honestly can’t recommend them more. They’re full of cream and filling, and although the packet looks small, you actually get a lot of chocolate inside the packet. I could live off of these forever and be more than happy! These are £1 a bar, which may seem expensive but they’re honestly really worth it and you won’t regret buying them.

I got my family to try one of the Melto’s too and they said that they were nicer than the gluten filled “Kinder Bueno”.

Both the Melto’s and Temptie’s you can get from Asda and the Melto’s you can also get from Morrisons too!

Where have I been, What am I doing?!

Hey!

So, as you can tell, i’ve been off here for a while and not as consistent with my instagram posts too. I’ve been so crazy busy, had some issues with illness and also some issues with WordPress and themes etc.

I’m back and i’ll try that little bit harder, but heres what i’ve been doing this Summer so far..

Spain:
At the start of the summer I went to Spain (blog post already posted, take a look!). Spain was good, it was hot, but it was STRESSFUL. The resort we stayed in what absolutely awful for gluten free and just in general.. I stayed there for a week and didn’t even have a bed to sleep in.. i was sleeping on sofa cushions for a week with a bottom sheet over me.. it was the absolute worse!

Paris:
Paris was well and truly a nightmare and i’m still waiting for http://www.booking.com to sort it out. They seemed really helpful whilst we were there but not so much now we’re back. Still waiting for refunds and honestly – an apology.

Here’s the text I wrote with my caption on one of my insta posts – (@basicbee)

“I wouldn’t usually use this to rant but I need to warn people about a hotel that we booked through @bookingcom (not their fault at all!) – – – We just landed in Paris for our stress free mini break… Got here got in a taxi that locked us in and tried to take £150 euros from us (for a 15 minute journey). Got an Uber after 40 mins, got to the hotel paid £40 for Uber, the hotel didn’t have anyone at reception they put us in a room that was the size of a store room, didn’t have a bathroom, and a dirty sink that didn’t work, and had a bed smaller bed for both of us, no one at reception (they don’t man it so we had no one to help us feel remotely safe) so can’t get a refund for the £80, people smoking in there, doing drugs, trying to block us walking, shouting things at us, trying to get in our room, no lock on the door of the room – then we left, found another hotel which is £163 that’s the cheapest we could find.. paid another £35 in a taxi to get back here which is next to the airport, just got here, the reception are lovely, he said he didn’t have the same room for both nights for us, so we’d have to change room we said it’s fine, he went to do details and said don’t worry go to bed you look tired and stressed, he then upgraded us to a suite with that sleeps 5/6 people for the same price.. told us all about free buses to get us to places.. then rang up the room were in to check we’re okay.. and to tell us he’s moved everyone around so we can be in the same room for both nights were here.. He really is our super hero right now! It’s finally bed time, and it’s time to eat biscuits and sleep before our 7am alarm! Tomorrow (well today!) is a new day right?! 🙈😭”

The next day we went to Disney Land and actually had a really good time!

Now we’re back, thinking about it more, it is slightly booking.com’s fault. They shouldn’t have listed the hotel as a hotel when its a hostel AND they should make sure their guests are safe.. But anyway! Moving on..

Wales:
It’s pretty common knowledge that I LOVE North Wales. It’s one of my favourite places in the entire world, if not my favourite.  It’s so chilled, not stressful, gluten free options are everywhere and i can dress in whatever i feel comfortable in, without feeling like i’m being judged. Theres always loads of driving in wales too, but I drive there which means i have my car, so theres no waiting around for trains or buses etc. It’s also SO pretty!
We alway stay at a place called Ogwyn Bank, and it’s honestly just so pretty. Theres so many beaches, mountains and just everything and anything you could want.

The Browns Wedding:
My friend Susie got married to her partner Adam a few weeks ago. I did her hair and her bridesmaids hair and also her makeup. It was such a good evening, and the venue was SO pretty.

Colchester – Essex: 
I went down to Colchester to see my friends. I saw Jade, Aeysha, Mem, Roger, Charlotte and Rachael. It was a good weekend and I got to BBQ on a beach type place that also had sand.. it was so CUTE though! I made sweet chilli and lime prawns, they were good!

Some of the guys i hadn’t met before, so it was SO good finally meeting them again! I’m going back down next weekend too!

House, Home and Moving:
Dan and I started buying a few bits for when we move out. We got glasses, cups, tea towels and a few other bits. We thought it would be better to start buying now then bulk buy when we move in. This way we don’t skint ourselves. We’ve worked out where we want to live now and I can’t wait to move out at the start of next year with him!

Anniversary Weekend:
At the end of August it’s 2 years since Dan and I went on our first date. He told me we could do whatever I wanted so we booked some bits! Then it turns out he needs to go and watch the football on the Saturday… SO! We’ve had to move things around and now we’re off to try “Ghetto Golf” in Birmingham. I’m actually really happy about this because i’ve wanted to try it for a while.

This Weekend:
This weekend my friend Jade is coming up from Colchester. We have SO much planned which obviously includes binge watching Greys Anatomy, letting me cook too much food and going on an adventure on Saturday.

Sunday, we’re going for breakfast and then she’s leaving me to go back home. Then i’m seeing Dan for a few hours and we’re going for afternoon (well, evening) tea!

And thats about it!
I had some amazing cookies from @Thenuttybrunchco to try last weekend, i’ll let you know how they were on my next post!

Baked Eggs & Potatoes.. My Way!

So, last week I could hardly eat a thing – I had a google for soft meal ideas and found nothing. Dan was coming to stay so I didn’t want to just give him bland mash potatoes – I had a look at what we had in and made a meal, that honestly – was SO good!

Ingredients –

  • 2 Large baking Potatoes
  • Chorizo Sausage
  • 1 Pack of Bacon Lardons (we had smoked bacon in)
  • 12 Cherry Tomatos
  • 4 Spring Onions
  • 50g Cheese (grated) –  We used Cheddar
  • Flat Leaf Parsley (to taste)
  • Coriander (to taste)
  • Olive Oil
  • Salt
  • Pepper
  • 2 Eggs

I also used 2 small cake pans. This in my opinion cooked it better and kept everything together.

Method – 

Pre Heat Oven To Gas Mark 5.

  1. Peel 2 large potatoes & Cut into Small chunks. Pop into boiling (slightly salted) water and leave for 10 minutes.
  2. Whilst the potatoes are boiling, pour a small amount of oil into the cake tins and pop them into the oven to heat up.IMG_6917
  3. Slice your Chorizo, we used 2/4 of the Chorizo sausages from the pack and this was enough.

  4. Over a low heat, add a tea spoon of oil in a pan,  pop your bacon lardons to brown off.

  5. Pop the Chorizo into a pan after a few minutes and keep moving everything around.

  6. Once browned off, take off the heat and put to one side.

  7. Drain your potatoes.
  8. Remove the cake tins from the oven and pop your potatoes into them. Leave a circle of space in the middle.
  9. Add salt and pepper to taste and pop back into the oven for 5 minutes.
  10. whilst the potatoes are roasting, cut your tomatoes and slice your spring onions.IMG_6920
  11. Remove potatoes from the oven, and mix in the bacon and chorizo. Add your salt, pepper & tomatoes too. Stir together and again, push to the sides to leave a circle empty in the middle.
  12. After 5-10 minutes remove from the oven, make sure theres oil in the middle of the pan, Crack ONE egg into the middle of each tin and pop back into the oven.
  13. Cook for 7 minutes.
  14. Chop your parsley & coriander (to taste).

  15. Remove from oven & sprinkle cheese, Parsley and coriander ontop. Add the Spring onion too.

  16. Pop back into the oven for another 3 minutes – to melt the cheese.

    I cooked mine for slightly longer as i don’t like runny eggs. For runny eggs yolks, use the timings above.

You need a Pizza’ This! – Gluten Free Chicken & Pesto Pizza

So Hey!
I’m back & I’m playing catch up with recipes as i’ve cooked and baked a fair amount over the last month or so!

In the UK, we never really get a Summer but we’re currently on week 3 of nice weather. I put the poutine and gravy away for once & I made pizza’s instead; and they worked really well!

Recipe:
For the base:

  • 2 teaspoons dried active baking yeast
  • 1/2 teaspoon brown soft sugar
  • 350ml warm water 
  • 1 teaspoon salt
  • 2 tablespoons olive oil
  • 430g plain flour (I use the co-ops one Free from flour and it works amazingly)

Toppings: 

  • Tomato and basil sauce (Literally just Chopped tomatoes, blended with basil, parsley, a small amount of garlic, salt and pepper.
  • Roasted chicken breast
  • Green Pesto – You can buy this or use the recipe that I use (linked in blog on main page from Wednesday)
  • Mozzarella Cheese (Fresh is always the best as you can pull it apart but grated works too!)

Method:

  1. In a large bowl, dissolve the yeast and brown sugar in the warm water, and let sit for 10-15 minutes.
  2. Stir the salt and oil into the yeast mixture, then Mix in half of the flour.
  3. Turn the dough out onto a clean, well floured surface, and knead in more flour until the dough is no longer sticky. Place the dough into a well oiled bowl, and cover with a damp cloth (i used a tea towel and it worked fine!) . Let the dough rise until double in size; this should take about 1 hour. Punch down the dough, and form a tight ball. Allow the dough to relax for a minute before rolling out.
  4. Add your toppings – *Full list of my toppings above –
  5. Preheat oven to 220 C / Gas mark 7.  If you are baking your pizza in a tray, lightly oil the pan, and let the dough rise for 15 or 20 minutes before topping and baking it.
  6. Bake pizza in preheated oven, until the cheese and crust are golden brown, about 15 to 20 minutes.

Leave to cool for a few minutes, cut and serve.

Is Spain good for Gluten Free?

Hey Guys! – Long time no post –

Last week I was in Alcudia in Spain and we stayed at the Belle Vue Club Hotel – And it was AWFUL.

We went all inclusive but the food was SO bad, they offered be iceberg lettuce and grated carrots as it was the only thing they knew was definitely gluten free.. We told them a head I was coeliac and explained.. They said they knew all about it and all about other allergies but clearly they didn’t.

They also booked in 500+ Spanish students into the resort so even when it was meal time we couldn’t get to the food anyway as you literally got pushed out the way..

It was that bad I didn’t even have a bed for the week as they’d double booked – it was honestly awful.

On the plus side, we left the resort a lot (not that we had a choice) and we found some really good places for gluten free food, especially in the Old Town of Alcudia.

We found a restaurant where the chef was also gluten free, so he knew everything and the good was incredible! It was called “Sa Fonda Liabres” – and honestly, I couldn’t recommend it more. If youre ever in the Old Town of Alcudia, you MUST go!

All in all, the Resort was AWFUL, but Spain itself was amazing, Pastas, Paellas, Salads, Breads, It was amazing!

Holiday – *Pre* Summer Beach Break

So!
Every time i’ve been away in the last 2/3 years i’ve always done City breaks.
Madrid, Rome, Paris- numerous time, Barcelona and so many other places… I LOVE a City break.. we’re only there a few days, we get to explore.. it’s bliss..

Tomorrow I fly out for my first beach holiday in forever and it’s been really hard to try and pack things I need?!

…Surely it isn’t meant to be this hard right!? I *Think* i’ve got everything… if theres anything else you can think of, let me know please!

Cinnamon French Toast in 5 Minutes (Using the Genius Toastie Loaf)

I’m back, it’s been dramatic, so it’s time to fill my stomach with sugar and have a lazy weekend..

Thats right, in 5 minutes you can go from getting bits out out the fridge to putting it on the plate.. Ready?

We used the Genius Gluten Free Toastie Loaf and it works amazingly.

Crack an egg, and add a splash of milk in a wide bowl, add cinnamon to taste ( I have loads of cinnamon because I love it).

Also my bad for the boomerang, I just love them for insta!

Pop your bread into the bowl and leave it for 30 seconds on each side so it sucks up the egg mixture.IMG_2017

Turn over, make sure every part of the bread is coveredIMG_4549

Pop into a pan with a little oil, it will spit, so be careful! Fry on each side.IMG_4881

Pop onto some kitchen paper to get the oil off, serve with whatever you like.. I had smoked bacon, strawberries and syrup.  IMG_2880

Nah, that’s just my illness..

“Definition of invisible. plural invisibles. : an invisible person or thing : someone or something that cannot be seen or perceived.”

I’ve been around but not around at the same time. I’m massively behind with my blog too! So here’s a little update on where i’ve been..

and SHOCK, it’s all down to my abnormal immune system..

For the last 12 months i’ve felt ill on and off, but explaining it was near enough impossible. I went to and from the doctors and GP and was always told i just had low iron levels and that i was anaemic.

About 16 weeks ago enough was enough and there i was, back at the doctors surgery, refusing to see anyone but Dr T. He’s in charge of the entire surgery. My theory was, if he couldn’t work out what was wrong with me, thats it, it was all in my head after all and really it IS just low iron and i’d just need some stronger iron tablets.

My appointment was already 25 minutes late, so in that 25 minutes i was just doubting myself over and over again and worrying if i was wasting the NHS’ time.. Yet deep down I KNEW there was something wrong.. but i couldn’t understand why nobody would listen, or help me.

I got to the point where unless i was with Dan, or going to 2 of the venues we work with, or to work I couldn’t leave the house. I was repeatedly seeking approval on how i looked, if i could leave the house like this, sending photos of outfits to people, or asking my mum repeatedly before i left the house. It got to the point that I knew every single weekend that Dan came to see me, I wouldn’t be 100%, i’d plan stuff and get SO excited to do it, but when it came down to it, I just felt too out of it. I also got to the point where I truly believed he’d be better without me and the anxiety of that was over whelming..

As soon as i was in the car, I was fine but the nervousness, anxiety and irritability was way too much. I was SO tired, yet couldn’t sleep. My legs would go dead, my heart would race and I was just constantly weak.. Yet put me into work, watch me at work and i was fine. I could be around 1000+ people at a time – I just couldn’t be with 2/3, the nerves took over.

When I woke up in the mornings, I wouldn’t have fallen asleep till 5/6am, work or not yet i’d be waking up before my alarm at 8am instead of 9am / 10am.

Was I just over tired? Dehydrated?
Every time I put on some weight and began to look normal, i’d lose it the week after. It wouldn’t be a small amount either, it would be a stone off and off, week by week. I knew this wasn’t healthy… but I was at my wits end.

Finally, it was my appointment time, I went into the GP room and I broke down to the GP, convinced I was crazy. He gave me endless tissues, told me his room was always open and booked me in for blood tests the very next day.

I had my blood tests, they took what I thought was a lot of blood, and I passed out.

I woke up, went to work and pretended everything was normal.

The following day, at 9am I got a phone call back from my Dr and was asked to come to the GP surgery. I hadn’t got in from work until 3am, didn’t sleep till 7 and I was told I wouldn’t get results for a week. Yet, here i am, walking to an emergency appointment the day after, less than 24 hours after..

As I arrived the doctor was there to meet me and we walked straight into his room. He started listing off symptoms and I was verbally ticking them off.. Everything seemed like it was starting to make sense :

  • nervousness, anxiety and irritability.
  • mood swings.
  • difficulty sleeping.
  • persistent tiredness and weakness.
  • sensitivity to heat.
  • swelling in your neck from an enlarged thyroid gland (goitrte)
  • an irregular and/or unusually fast heart rate (palpitations)

Finally – he knew what was wrong with me and again (shock) I broke down in tears. It turns out i wasn’t losing my mind, i wasn’t crazy, there has been something wrong with me!

He diagnosed me with a VERY Over Active Thyroid. He was shocked it had been left this long and tests weren’t done before. He’d also tested my liver levels to check which medication I was okay with. He gave me a prescription and off I went..

He’d booked me into various appoints at the Leicester Royal Infirmary in the Endocrinology department.

Sounding good right?

Nah! 

So far we’re around 3 months in of medication – my medication is being added too every other week and the MG’s i’m on is going up and up..

I’m currently meant to be finally in my appointment next Friday, then we’ll talk about Radiotherapy and Graves disease – I’m crossing my fingers this appointment doesn’t get cancelled too..

I guess the moral of this post is to say, YOU know your body and YOU know when you’re not feeling right. So listen to yourself and push, push, push as much as you can, until you finally get an answer.

I’ve got half my answer and i’m still waiting – I guess i’m happy to know it wasn’t all in my head though.

This isn’t a dig at the NHS either, they’re amazing and they do amazing things, just sometimes things clearly get missed.

Now i’m ready to plan summer with my favourite humans and puppy dog and make the most of it.

Invisible illness’ are just as important as visible ones.. Sometimes they’re just harder to explain..

A Saturday in The Cotswolds

Hey! – As much as i’m trying to remember to blog more it’s REALLY hard to find things to actually blog about at the moment..

I know it’s not a “Sunday Funday” but i’m going to class it as one!

So! Dan and I managed to get a 4 day weekend together this week, we went to a gig on Thursday, had a lazy Friday until Tommy (@Tommy_the_sausage) got dropped off to spend the weekend with us whilst his Mom and Dad went to a wedding.

We’d had really nice weather on Wednesday, Thursday and Friday so we thought we’d take Tomtom to Matlock or to the coast. Turns out when it came to Saturday the weather wasn’t going to be as good – so my Mom, being the angel it is, some how followed the nice weather and worked out where would be best for us to go.

My step dad grew up in the Cotswolds so he was more than happy to come with us – this date day with Tomtom turned into a family day, but this was clearly for the best, as me and Dan would have just got lost..

We walked up to Broadway Tower, and went up it. £5 each to go up was rather steep if i’m honest.. it was interesting, don’t get me wrong, but it wasn’t £5 each interesting.. Dan forgot to tell my mom he was scared of heights.. so up he went being massively brave and then panicking at the top.. oooops!

We went to a pub for lunch, the menu was pretty decent for gluten free options, but i really fancied a cob (yes it’s a cob, not a roll, a bap, a tea cake or whatever else! It’s a cob!). I didn’t expect them to have gluten free bread to be honest. I settled on some home made potato wedges with cheese, smoked bacon, a side salad and sour cream – I LOVE sour cream so this totally worked for me, it was super yummy!30429430_10155228513081296_1934943744_n

After lunch, we walked into broadway and i found a chocolate shop, it was amazing! so much of it was gluten free too! 30429340_10155228513156296_813911477_n

When we got to bourton-on-the-water we found my fave sweet shop. I ended up buying shrimps, chocolate sea shells, rosey apples, rhubarb and custards and pear drops. I LOVE an old fashioned sweet shop – can you tell?!30859982_10155228513116296_1840854727_n

I bought these chocolate Bees for me and my friend Charlie (IG @BeeFreeFromGluten) -I’ve already eaten half of mine, they’re SO good!

Look at my chocolate sea shells from the chocolate shop – they were filled with praline.. they were amazing.. which is clearly why i only gave one to my mom and ate the rest myself… in one sitting.. i got 12…30430189_10155228514666296_582706862_n

We’d walked miles around The Cotswolds, Bourton-on-the-water and broadway, so we went and found a little pub near the river.

It was called the “Kingsbridge inn” and it was awful..

They didn’t have a single thing on the menu that was gluten free. When i asked they just shrugged and were the opposite of helpful and the staff were more bothered about hanging out with their friend in the beer garden and swearing about other customers then actually helping us… I put a message on the facebook page, they told me i had to download and app and ask for help.. we did, they didn’t help.. i really wouldn’t recommend going here at all… walk a bit further and go to a tea room or a different pub instead! 30784536_10155228513626296_985199372_n

We ended up having a drink and walking back to the car, Dan took tommy cause my arms were tired..

All in all, it was a really nice day and we all had a really good time. Including Smiffy and Tommy!

Next week we’re going on an adventure.. kinda.. and Dan doesn’t know where..

Madame Waffle – Lincoln

Hey! SO! Something a little different –

If you’re looking for something different I couldn’t recommend Madame Waffle more! They gluten free options are amazing!

I ordered two! (But i ate one before I took a photo – Ooops!) So my brother saved the day and sent me his photo, so you can get a rough idea!

The first one I ordered was called “The Pricilla” it was Waffle, Peanut Butter, Bacon, Banana and Maple Syrup. It was such a mixture – but it was AMAZING!

The second one I had was the “Fresh Fruit” waffle. This was nice too, but the calories in the first one made it ten times better! (see above)

We’re due to go back in a couple of weeks and I honestly can’t wait, I don’t think i’ve ever been so excited over Waffles before in my life!

GF – Sea food Pasta

Hey! So, On Sunday, Dan and I went to the City ground to watch Forest play (this was his idea of a date day) – and it was actually good! They won 2-1.

On the way back I gave dan literally 12 options of what he could have for dinner that i didn’t mind cooking. He still ended up not picking, so I picked and we had seafood pasta. It was SO good – if i do say so myself!

It’s really easy to make too! Here’s the recipe –

  • Garlic
  • 2 Red Onions
  • Fresh Parsley
  • Fresh Basil
  • Salt
  • Pepper
  • Guten Free Pasta (Morrisons is my fave)
  • Double Cream
  • Cherry Tomatoes
  • Squid Sliced into Rings
  • Muscles – shelled or de-shelled – this is up to you!
  • Prawns
  • Olive Oil

 

Method: 

  1. Add a little Olive Oil to a large pan.
  2. Chop the garlic and red onion into small chunks and pop it in the pan and let it fry off.
  3. Dice your Parsley and your basil.
  4. Add your sea food (but not the squid) into the pan and let it warm up.
  5. Add salt and pepper.
  6. Pour in 3/4 of a pint of double cream and turn the heat down to simmer.
  7. Add your cherry tomatoes (sliced in half)
  8. Add your Squid
  9. Add your Parsley and Basil and stir
  10. Leave to simmer for 15 minutes on the lowest heat
  11. Boil your pasta and drain it (11 minutes is usually enough time for GF)
  12. Wash off any starch left on the pasta
  13. Pour your sauce into the pasta saucepan – mix and serve.

Serve with a Green Salad or/and garlic bread.

It’s super easy and makes a really tasty meal!

“Frankie And Benny’s do a great Gluten Free Menu!” Said no one, ever…

Hey! So now i’m back to blogging a little more, I can tell you about our experience on Sunday night! We went to Frankie and Benny’s and it was.. well, take a read.

On Sunday night Dan and I wanted to go out for dinner. As usual we did the whole where do you want to eat, where do i want to eat etc. Somehow we ended up between Chiqutos and Frankie and Benny’s. After flipping a coin 5 times we went to Frankie and Benny’s.

Once we got there the menu actually looked pretty good! There was starters, quite a few different mains and desserts too!

I had bacon, cheese and bbq sauce potato skins to start. They missed the BBQ sauce but I had sour cream (my all time fave) so I wasn’t bothered and more than happy.

For our mains, Dan ordered a Spaghetti Bolognese and I ordered a Carbonara.

When the food came out, his looked great, but mine didn’t look amazing. Either way, it’s carbonara which is one of my “Go To” meals if I eat out at an Italian.

I bit into the pasta and it was SOLID. It literally crushed and fell apart in my mouth.. Dan tried a bit too, to make sure it wasn’t just one bad piece.

It was cold, solid, and AWFUL!

We were super polite and sent it back – then he manager came over..

As the manager got to the table, instead of telling us he’d make a fresh one, or even cook it for a little longer…

He decided to tell us it wasn’t made here. We were both pretty puzzled.. Until he explained that the gluten free food was “Pre Cooked” before it got to the restaurant and microwaved.. his exact words!

SO hold up a minute, i’m paying £9.99 for a microwave meal (with no sauce)?! How can they possibly justify that?!

IT’S PASTA – you just boil it! My Italian Grandmother would be going absolutely crazy right now if she heard this..

So yeah, long story short, he told us that it was pre cooked before it arrive, no wonder it was pretty gross!

I posted in a GF group on facebook about it and they recommended a burger – it’s safe to say we won’t be going back any time soon though!

If i wanted a microwave meal, i’d nip to Morrisons and eat it in front of the TV in my PJ’s!

I am currently a very bored Bees when it comes to eating out.

New York Baby!

So…

I’ve not been around and blogging much lately, i’ve been super busy (but thats another post..) So here i am… thinking about Christmas already!

I was totally and utterly lost last Christmas as I just didn’t know what to get for Dan and it ended up being a trip to Barcelona, joint with his birthday present and then a few other little bits.

Buying for someone that literally has everything is the absolute worse because there isn’t anything new or exciting. Dan and I have gone to Paris twice, Madrid, Rome and Barcelona in the last 19 months and each time we’ve gone, it’s purely to find new things and to literally go on an adventure!

Rome will always be my favourite, although I say this, but i can think of loads of amazing things from each place!

For some reason (which i’m more than happy about) it’s now a “Thing” that we go away as his Birthday / Christmas present and i’m totally okay with that.. apart from the fact that i feel like i need to make it absolutely amazing each and every time!

So yeah, back to the point of this.. I was sitting in bed on night off from work and decided that I wanted to book something for his Birthday / Christmas but tell him, so we both had time to save so we could do everything and anything we want to do..

I’d dropped hints about New York and he kept saying “Yeah one day, one day i’d love to go with you…”

So, me being me and being the very extra person that I am, didn’t really listen to the whole “one day” part and jumped straight on the internet.

After looking for 4 days, at any and every opportunity I could and asking various people when to go, what do do etc… We’re going to NEW YORK at Christmas for 4 days.

I told Dan i’d booked us a surprise but said I wasn’t going to tell him what it was until his birthday (November).. An hour later i was bugging him to ring me so i could tell him.. My whole surprise thing lasted a solid hour and a half max.. Oooops!

So, heres my question; Other than obviously pretending that we’re in “Home Alone” and doing the usual New York bits at Christmas, where would YOU go and why? After flying all that way i’d hate to miss something! – So let me know!

Lazy Day GF Brownies

So, after having a fractured foot (It’s still fractured, but I can kind of walk now!) –  We’ve had the last few weeks stuck in the house, binge watching Netflix, eating way too much food and being lazy. We decided to have a half busy weekend!

On Saturday we went into town, ate way to much Yo! Sushi, did some shopping and then a food shop, then we came home.

My mum and step dad went on holiday on Sunday morning so me and dan had the house to ourselves which means I got to bake!

I made a pie and some brownies, heres how I made the brownies and i’ll post the pie tomorrow!

First you’ll need –

  • 200g sugar
  • 300g butter, melted
  • 1 teaspoon vanilla extract
  • 3 eggs
  • 200g plain flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 150g milk chocolate, melted
  •  100g dark chocolate chunks

Method: 

  1. Melt the milk chocolate and butter in a bowl.
  2. Mix the dry ingredients together – flour, sugar, baking powder, salt.
  3. Whisk the eggs.
  4. Add the vanilla extract into the dry ingredients.
  5. Add the dry ingredients into the milk chocolate and butter mixture, then slowly add the eggs.
  6. Add 2 t-spoons of water.
  7. mix together, and place in a baking tin.
  8. Tap the baking tin on the work top to get an even base.
  9. Add the dark chocolate chunks.
  10. Place in a pre-heated oven on gas  mark 7 for 20-25 minutes.
  11. Take out, slice and serve.

This is the only brownie mix that i’ve been able to do that hasn’t made the brownies dry. These were really soft, gooey and super tasty!
